主料 活大黄鳝1.5公斤。调料 熟大油900克(实耗约100克)料酒50克，酱油20克，白糖7克，盐5克，葱姜各12克，胡椒粉1克，大蒜瓣60克，味精5克。
【制作过程】
(1) 将鳝鱼宰杀去背骨，用净布抹去血，切成7厘米长段，倒入大油炒勺中炸至虎皮色捞出沥油。 (2) 用原勺留底油50克，烧热后把大蒜瓣煸香，放入炸好的鳝段，再加进葱、姜、酱油、白糖、料酒、盐、适量清水，用大火烧开，再转小火烧至8～9成烂时，改大火将汁收浓,加味精,淋上大油50克,撒上胡椒粉即成
