Under the fixed conditions of 10% substrate,Flavourzyme -Papain ratio 1:1,the effects of pH,enzyme amount,temperature,reaction time on hydrolysis degree of Procambarus clarkii byproduct were investigated,and these factors were optimized by orthogonal test.
