黄瓜拌鸭掌
先将鸭掌洗净，放入汤锅内煮熟捞出，用凉水过凉取出。在每个鸭掌上中和爪部的中间划开，抽出骨头（保持鸭掌完整）。黄瓜洗净一剖两瓣，顶刀切成0.7厘米厚的片，码在盘内。每个鸭掌切成3块（仍保持原形），摆在黄瓜上面。用调料兑好汁，浇上即成。本品特点为清爽可口，形状美观，生津泻火。
