性质:使热物体的温度降低而不发生相变化的过程。冷却的方法通常有直接冷却法和间接冷却法两种:(1)直接冷却法,直接将冰或冷水加入被冷却的物料中,最简便有效,也最迅速,但只能在不影响被冷却物料的品质或不致引起化学变化时才能使用,也可将热物料置于敞槽中或喷洒于空气中,使在表面自动蒸发而达到冷却的目的;(2)间接冷却法,将物料放在容器中,其热能经过器壁向周围介质自然散热,被冷却物料如果是液体或气体,可在间壁冷却器中进行,夹套、蛇管、套管、列管等式的热交换器都适用。冷却剂一般是冷水和空气,或根据生产实际情况来确定。
