蛋白质的结构分为四级。蛋白质的一级结构表明氨基酸的排列顺序和连接方式；二级结构指多肽链的肽链骨架借肽链平面与α-碳原子的单键的旋转性绕成的螺旋结构(即α-螺旋）或折叠成的片层状结构(即β-片层结构）；三级结构表示每条多肽链的折叠方式；四级结构表示组成蛋白质的亚基相互联系的方式。蛋白质的结构与其功能密切相关。
