| 嗅觉 olfactory sense 挥发性物质作用于嗅觉器官而产生的感觉。嗅觉常与味觉紧密相联，是动物进化中最古老的感觉之一。位于上鼻道及鼻中隔后上部的嗅上皮内的嗅细胞是嗅觉的感受器。嗅刺激物随气流刺激嗅纤毛。在正常呼吸时，气流几乎全部由下鼻道通过，达不到嗅感受器，所以气味不明显。只有用力呼气时气流才能到达上鼻道而刺激嗅纤毛。进食时有气味物质也可由后鼻孔上达嗅感受器，所以嗅觉和味觉是经常联系在一起的。 一般都用引起嗅觉的物质的名称来描述气味，如水果香、花香、焦臭等等。目前还没有一种较合适的对气味进行分类的方法。人的嗅觉极为敏感，可以比味觉高1万倍。空气的温度和湿度对嗅觉感受性有很大影响。由于嗅中枢与间脑及中脑的许多中枢相联系，因而嗅觉的感受性和植物性神经系统的活动以及内分泌腺的活动有密切的关系。 适应是嗅觉极为显著的特点，对一种气味的适应是感觉不到它了。气味的相互作用表现为，当两种气味的强度差别大时，就出现气味的掩蔽；当强度适宜时，出现气味的混合。 |
