【原料】
笋母鸡1只（约1.5公斤），糯米150克，火腿25克，生菜25克，水发冬菇15克，萝卜花一朵，盐10克，料酒10克，糖12.5克，玉米粉12.5克，大酱7.5克，鸡油50克，豆油250克，芝麻盐25克，鸡汤500毫升，辣椒酱25克。
【制作过程】
1、笋母鸡宰杀放血，煺毛，去内脏，由颈部脱皮，皮不要弄破，将鸡肉剔下，切成小丁，火腿、冬菇也切成小丁；糯米用鸡汤蒸至五成熟。整鸡洗净，浸泡清水中，捞出，控水。 2、炒锅烧热，放入鸡油，烧五成热，放入鸡肉、冬菇丁、火腿丁煸炒一下，放入料酒、盐、糖、一半大酱，炒匀，然后，放入糯米，拌匀，装入瓷碗中，待用。 3、 将馅从开口处装入鸡腹，开品处用线缝好，将鸡身抹上余下的大酱，放在瓷盆内，蒸30分钟左右。 4、 将鸡取出，抹匀玉米粉，放入五成热的豆油锅中，炸成黄色，捞出，控干，鸡脯向上放在盘中，用生菜叶围边，放上萝卜花，做点缀用。 5、 芝麻盐、辣椒酱放小碟内，蘸食。
