   分子式HOC(CH2COOH)2COOH。又称2-羟基1,2,3-丙烷三羧酸、枸橼酸。以游离状态存在于多种植物果实中,如柠檬、菠萝、葡萄、醋栗、覆盆子。其中以柠檬汁内含量最多,约占6%~10%。也存在于动物组织内, 它是生物体内糖、脂肪和蛋白质代谢产物之一。柠檬酸为无色晶体;熔点153℃,相对密度1.665(20/4℃)。含一分子结晶水的柠檬酸加热至100℃熔化。溶于水、乙醇、乙醚。!!!N0477_1
   柠檬酸具有多元羧酸的性质,可生成盐、酯和酰胺,还可与多种金属离子形成络合物。工业上柠檬酸可由葡萄糖或蔗糖发酵制得,也可从低质量的柠檬中提取。柠檬酸广泛用于人造饮料和食品工业;也可作金属表面的清洗剂。柠檬酸盐还用于医药,钙盐是钙质补剂,钠盐是血液抗凝剂,柠檬酸铁铵是补血剂。柠檬酸酯可作食品包装薄膜的增塑剂。
