[原料] 水发天顶250克。
[调料] 黄酒、酱油、糖、麻油各2克、盐、香醋、味精各1克，胡椒粉0.1克，辣油5克，芝麻酱3克。
[操作程序]
1．天顶入沸水锅烫一下捞出，用净水浸凉，沥去水分。
2．将黄酒、酱油、盐、糖、胡椒粉、香醋、味精、麻油、辣油、芝麻酱放碗里调匀，放入天顶拌一下即可装盘。
[特色点评] 红亮，脆嫩，鲜香。天顶是猪口腔中的上腭，形态别致，口感脆嫩。
