烧麦是北京久负盛名的小吃之一。烧麦出现于元大都,是地道的北京小吃。烧麦起源于包子,它与包子的区别在于顶部不封口,作石榴状。明代称烧麦为纱帽,清代称之为鬼蓬头。清乾隆年间的竹枝词有“烧麦馄钝列满盘”的说法。
以前烧卖的馅分四季而有所不同:
春以青韭为主,夏以羊肉西葫芦为优,秋以蟹肉馅最为应时,冬季以三鲜为当令。三鲜烧麦皮薄剔透,色泽光洁入口香醇鲜美。北京经营烧卖的餐馆不少,以都一处最有名。而都一处的烧卖则以三鲜和蟹肉烧卖最为人喜爱
制作方法:
将猪肉洗净剁成末,水发海参搞好,切成丁
对虾去掉虾头、皮和沙线,洗净后切成丁,然后一起放入盆中,加上精盐、酱油、绍酒、黄酱、味精、姜末、芝麻油和凉水,拌匀成馅
将面粉加入开水拌成面团,揉好搓成圆条,揪成面剂,并刷上一层芝麻油,以防表皮发裂
取少许面粉蒸熟,晾凉后过箩,铺在案板上,将面剂放在上面,擀成圆形烧麦皮,包上馅,收口松点,露点馅,包好后入笼蒸熟即成
