由胃壁细胞分泌的盐酸。胃液中的盐酸以两种形式存在，一种是解离的称为游离酸，另一种是与蛋白质结合的盐酸蛋白盐。在纯胃液中，胃酸的浓度为125～165mmol/L，其中绝大部分是游离酸。盐酸具有多种功能，它能激活胃蛋白酶原，使食物中的蛋白质变性而易于分解；杀死随食物进入胃内的细菌；进入小肠后，还可促进胰液、肠液和胆汁的分泌；它所造成的酸性环境还有助于小肠对铁和钙的吸收。但若盐酸分泌过多，也会对人体产生不利的影响。一般认为，过高的胃酸对胃和十二指肠黏膜有侵蚀作用，可能是消化性溃疡发病的原因之一。
