在特定条件下,酶催化活性最大时的pH。溶液的pH对酶活性影响很大,在一定的pH范围内酶才有催化活性,各种酶的最适pH不同,如胃蛋白酶的最适pH为1.5~2.0;胰蛋白酶的最适pH为8.0;同种酶的最适pH可因作用的种类及浓度不同或所用的缓冲剂不同而稍有改变。
