丁酸发酵 butyric fermentation
即由糖类生成丁酸、乙酸、二氧化碳和水的发酵。在专性厌氧菌丁酸梭菌(clostridium butyri-cum)中可以见到。由于细菌种类和反应条件不同,还可生成丙酮、丁醇、乙醇、异丙醇等,在生成丙酮和丁醇特别多时,称为丙酮-丁醇发酵。对各种梭菌进行研究表明,它是按糖酵解途径生成丙酮酸,再从丙酮酸开始,按下列各反应生成丁酸及其他产物。
