材料:咸猪肉片150克,韭菜400克,干葱头5片,炸蒜片、油、盐、料酒、味精、芡汁适量。
做法:
1、锅烧热,倒油烧至7成热,逐片放入咸猪肉,炸成略脆状后捞出。
2、将韭菜加入少许味水略炒后倒出。
3、锅内放少许油,倒入料头炒香,加入炸好的咸猪肉片,再加韭菜、料酒、味精、水芡汁(带少许蚝油),快速炒匀后亮油起锅。
贴士:炸咸猪肉片过程中要注意把握油温,既要炸熟又不能够炸干水分,还要保持脆度。
