论述烟草科学技术的学术性著作。美籍中国人左天觉著。1972年由美国宾夕法尼亚州斯特劳兹堡的道登·哈奇森·罗斯公司(T.C.Tso， Douden，Hutchinson & Ross,Inc., Stroudsburg, Pa.USA)出版。书中介绍了烟草的遗传类型；综述了烟草种子的发芽、生长和发育过程,栽培的环境条件，营养元素和肥料,放射性元素的污染以及生长机理，病理虫害和农药等；在生理生化方面，阐明了烟叶成熟采收后调制、陈化、发酵过程中的化学变化，以及有机物的新陈代谢（如碳氮平衡、三羧酸循环、酶类的作用）和因病害所引起的化学变化；讨论了烟叶的质量与其理化性质的关系，以及吸烟对健康的影响；说明了生产操作对烟气特性的关系，并提出控制烟叶成分以改善质量的各种可能途径。《烟草的生理学和生物化学》在搜集、筛选大量资料，并结合作者自己研究成果的基础上，系统地总结了烟草质量与植物生理和化学成分的关系。书中论述常为烟草工作者所引用。1990年修订再版，更名为《烟草的生产、生理与生物化学》(Production、 Physiology and Biochemis-try of Tobacco),补充了科技发展的新内容,扩大了生产技术内容。
