鳕鱼片 以狭鳕为原料,作如下加工:即去除原料鱼头、内脏,接着去除皮和骨后,切成三爿肉片,然后充分水洗和去水后,在肉片上撒上盐(撒盐量为肉片重量的15~20%℃)腌咸2~3天,干燥用机械干燥,其干燥工序与上述鱼鲞情况大致相同。
