性质描述: 白色结晶性粉末。双熔点约190℃和245℃。微溶于水(约1%)和乙醇(0.26mg/100ml)。无臭; 有强烈甜味,其稀溶液的甜度约为蔗糖的100-200倍。其甜味与砂糖十分相似,并有清凉感。0.8%水溶液的pH值为4-6.5。在水溶液中不稳定,易分解而失去甜味,低温时和pH值3-5时较稳定。

生产方法: 由L-天冬氨酸和L-苯丙氨酸甲酯缩合而得。

用途: 按我国GB2760-90规定可用于各类食品,最大使用量视正常生产需要而定。按FAO/WHO(1984)规定,可用于甜食,用量0.3%,胶姆糖1.0%,饮料0.1%,早餐谷物0.5%,以及配制用于糖尿病,高血压; 肥胖症; 心血管患者的低糖类; 低热量保健食品,用量视需要而定。亦可用作风味增强剂。
