台式蛋塔
材料（可做24个左右）：
油皮材料：中筋面粉（富强粉即可）300克、酥油 (shortening) 120克、糖粉(confectioner’s sugar) 75克、温水（约38℃）80克
油酥材料：富强粉180克、酥油90克
蛋塔水：牛奶180克，180克，细砂糖克，全蛋3个，蛋黄2个
做法：
1、制作油酥皮。
2、制作蛋塔水：把牛奶和水用小锅煮开，加入糖，拌煮至溶解，离火稍放凉后，加入全蛋和蛋黄拌匀，过滤备用。
3、把做好的油酥皮铺在塔模里，捏塔皮，并用小刀沿着塔模的边把多出来的面皮切掉。
4、塔皮整形后，把蛋塔水注入塔皮，约8~9分满即可，不要太满，因为面皮在烘烤过程中会厚，所以蛋塔水会溢出来。放入预热至170摄氏度的烤箱烤20~25分钟即可。
