白银箍翠玉

原料: 原 料:

粗壮嫩芹菜150克,鸭肠5根,泡红椒5克,蒜3瓣,葱白5克,姜5克,味精1克,绍酒5克,胡椒粉1克,白醋2克,麻油10克,熟花生油25克,精盐10克,小苏打50克。

制法: (1)将蒜瓣、葱、生姜(去皮)、泡红椒(去籽)均切成末,加入精盐(2克)、味精、胡椒粉、熟花生油、白醋、麻油调成味汁。

(2)将芹菜洗净,切成5厘米长的段,放沸水锅内焯一下捞出,摊开稍凉。

(3)用筷子将鸭肠翻过来,用精盐捏洗干净,加小苏打静置2小时至肠厚实肥大,再用清水漂去咸味。炒锅内放清水、葱、姜、绍酒烧沸,放入鸭肠烫爆至熟捞出,撒上精盐拌匀,切成5厘米长的段。在每段鸭肠内插入一根芹菜段,将在盘内,浇上调味汁即成。

特点: 青白分明,柔软脆嫩,造型别具一格。
