原料:大黄鱼1条,咸菜末100克,盐、料酒、味精、葱、姜、胡椒粉、猪油、清水各适量。
做法:1、黄鱼宰净,用刀在背部两面肉厚处略划几刀。2、炒锅加入猪油,烧热时,将黄鱼下锅两面稍煎,烹入料酒,加盖略焖片刻,加入清水、葱段、姜末,随后加盐、味精、胡椒粉,用大火烧后,改小火烧5分钟,待汤汁呈乳白色时,淋猪油,倒汤碗中即可。
