Compared with traditional winemaking process, from the aspects of cold maceration before fermentation , the change of density in alcoholic fermentation , contents of volatile acids, pigments, tannins, total phenol and sensory evaluation etc.
本文以传统酿造工艺为对照,从发酵前冷浸渍、酒精发酵期间比重变化及红葡萄酒中挥发酸、色素、丹宁、总酚含量及感官评价等各方面,研究了发酵前对葡萄原料添加适量的果胶酶和SO2,并进行冷浸渍,发酵过程采用清汁部分分离发酵的酿造工艺(简称新工艺)对新疆石河子产区赤霞珠葡萄酒品质的影响。
