腌火腿法
每十斤猪脚,配盐十二两,极多加至十四两。将盐炒过,加皮硝末少许,乘猪盐两热,擦之令匀。置入桶内,上面用大石压之,五日一翻。候一个月,将腿取起,晾于风处,四五个月可用。
又法金华人做火腿,每斤猪脚配炒盐三两(或云,原方配六两,不无太咸),用手将盐擦完,石压之。三天取出,用手极力揉之,肉软为度。翻转再压再揉,至肉软如棉,取出挂之风处,约当于小雪后起,至立春后方挂风不冻。
