   广泛存在于甲壳动物如虾、蟹、甲壳虫等壳内的一种物质。化学成分为2-乙酰胺基-2-脱氧-D-吡喃型葡萄糖基β-1,4双基键合而成的直链多糖。聚合度约1万。结构为:

   甲壳素可直接从甲壳内提取   。首先以稀盐酸将其中的CaCO3  除去  ,然后加浓碱处理  ,除去蛋白质及其他有机物。经水洗 、干燥即得 。甲壳素为白色粉末。不溶于水及稀酸、稀碱溶液,也不溶于醇类和其他有机溶剂。溶于浓无机酸和无水甲酸。在浓酸或浓碱的作用下水解。以浓碱处理时,脱去乙酰基(!!!J0563_2)生成壳聚糖  ,其氨基与酸反应生成溶于水的壳聚糖盐。进一步反应可得多种性能的衍生物。其主要用途:①纯化水和从水中提取铀离子。②凝胶色谱柱的填充物和分子筛 。③ 植物及微生物的保水剂。④纺织品的防缩、防皱处理剂等。
