原料配方 通过0.18毫米美国网筛的植物蛋白粉5～20份 酪蛋白1.5～6份 油脂10～15份 面粉25～50份 水分、糖、无机盐、发粉和香料适量，总蛋白质含量为10～20%(重量)。
制作方法 先将植物蛋白、酪蛋白和油脂混和，另将面粉、糖、水分、盐、无机盐、发粉和香料置于打粉机中混和。将已混和好的植物蛋白、酪蛋白和油脂的混合物加入打粉机一起捏和成面团，面团需静置片刻使其稳定。然后将面团模制成所要求的形状，置于焙烤炉中焙烤15～25分钟。此焙烤炉中的温度分成几段，温度从190℃逐渐降到145℃。将焙烤好的成品置于分几层的箱子中，逐渐冷却到室温。用此法焙烤的饼干，其蛋白质的赖氨酸损失低于10%。
这种高蛋白、高营养价值的饼干不会碎裂，其厚度大于8毫米，体极为20～60cm3。
