活鳜鱼1尾(重约600克),雪里红50克,碎干椒10克,泡菜30克,花生油100克,盐、味精适量,米醋50克,湿淀粉15克,料酒10克,姜、葱、胡椒粉少许,鸡汤50克,麻油5克,锡纸2张。
【制作过程】
1.鳜鱼开剖洗净,两边剞斜刀,用盐、味精、料酒、胡椒粉腌10分钟。雪里红、泡菜切碎。葱、姜切米粒。 2.锅内放油,将雪里红、泡菜、姜米、干椒炒香,烹入米醋,放盐、味精、鸡汤烧入味,勾芡,撒上葱,淋香油成卤汁待用。 3.取一锡纸摊平,浇上汁,将鳜鱼放在汁上,再在鱼上浇一层汁,用另一张锡纸盖上,两纸叠起包好,放入200℃的烤炉内,烤15分钟取出,入盘即可。
