性质:又称栎精,栎皮粉,五羟黄酮:栎精酸。系生物源类黄酮(bioflavonoids)类物质,广泛地存在于植物界,尤在果皮、树皮如山毛榉科的栎属(Querous);车轴草、脶草属(Ragweed)的花粉内和杜鹃花属的某些植物(如Rhododendron cinnabarinum)中。以栎属树皮为例,先磨碎,用热食盐水洗涤,用稀氨水抽提后用稀硫酸中和。煮沸滤液,栎皮酮结晶析出。从稀乙醇液中析出的含有2分子结晶水栎皮酮黄色针状结晶。在95~97℃时失水,314℃分解。紫外吸收峰(乙醇中)在258.375nm。易溶于冰醋酸、沸乙醇,略溶于无水乙醇,不溶于水,在碱性溶液中显示黄色。在醇溶液中呈味很苦。它是线粒体中ATP酶、磷酸二酯酶的抑制剂,在细菌中它具有诱变的活性。对毛细血管有保护作用。在制药和生化研究中广为应用,也是食品添加剂之一,起抗氧化剂作用并也作为黄色素使用。
