性质:又称大豆卵磷脂,磷脂酰胆碱。主要成分为磷脂酰胆碱(卵磷脂)、磷脂酰乙醇胺、磷脂酰肌醇、磷脂酰丝氨酸、磷脂酸存在于大豆、卵黄、肾上腺、红血球和脑中。为浅黄至棕色透明或牛透明黏稠液体或白色至浅棕色粉末或颗粒。易溶于醇、乙醚、石油醚、氯仿、苯,难溶于丙酮、水、乙酸酯。有吸湿性。在水中膨胀而成胶状液。遇空气及光线颜色变深。属两性表面活性剂,乳化能力强。含油种籽,如大豆制油时分离出的胶质经真空干燥后,加适量植物油(25%~35%)制成。也可由蛋黄、动物神经及脑组织提取。多用于食品工业,也可用于农药加工,作乳化剂、湿润剂、抗氧剂、黏度调节剂、浸渗剂。
