苦杏仁苷酶是粗酶制剂,包含β-葡萄糖苷酶(β-glucosidase,BGLu)和羟基腈裂解酶(Hydroxynitrile lyase,HNLs)等,主要存在于杏、桃、李子、苹果等多种果实的种子中,现在一般也将其作为主要含植物BGLu等糖苷酶的一般名使用,是与植物香气和产氰现象密切相关的酶。
