原料: 原 料：
原料：嫩冬瓜200克，火腿15克，冬菇15克，瘦肉15克，菜心30克。调料：花生油10克，盐6克，味精5克，白糖3克，鸡精粉5克，湿生粉适量，熟鸡油5克。
制法: （1）嫩冬瓜去皮去籽切长薄片，火腿、冬菇、瘦肉切丝，菜心改去老叶。
（2）火腿丝、瘦肉丝、冬菇丝加入少许盐、味精、湿生粉拌匀，把3种丝用冬瓜片卷起待用。
（3）待蒸笼水开时放入卷好的冬瓜三丝卷，用大火蒸5分钟后，把菜心烫熟摆入旁边，另用锅烧油，倒入清汤，调入剩下的盐、味精、白糖、鸡精粉烧开，用湿生粉勾芡，淋入熟鸡油，浇到冬瓜卷上即成。
特点: 切冬瓜片时要注意刀法，厚薄，长短都要一致。蒸的时间不要过长，以免蒸得太烂。
