罐罐鸡起源于清代末年，因用笔筒形瓦罐盛鸡蒸制而得名。罐罐鸡的选料、用料、制作工艺很讲究，风味别具一格，颇受四方宾客的赞扬。成为遵义地区的名菜肴，也是宴请客人席中常用的座汤菜。

罐罐鸡可根据招待不同对象，配以不同的原料。一般只需在砍匀的鸡块中，配入水发墨鱼、拍松的姜块、白胡椒、葱节及食盐少许，然后装入罐内，上笼用猛火蒸几小时即可。若高级筵席用，还需加鱿鱼、莲米，名贵药材“三七”、“天麻”等，不仅鸡肉嫩，汤清味鲜，营养丰富，还有祛瘀血、止痛、治头晕病等功能，是高级的滋补品。

在席上，每人一份，吃法讲究，很卫生。如用来作小吃的配汤，则又是一番风味。
