猪小肠放磁盆内,先滴下菜油少许,用手搅匀,候一时久,下水如法洗净,切作节段,每节量长一尺许。用半精白猪肉,锉极碎,下豆油、酒、花椒、葱珠等料和匀,候半天久,装入肠内。只可八分,不可太满。两头扎紧。铺层笼内蒸熟,风干。要用,当再蒸熟,切薄片,吃之甚佳。
