性质:又称多聚半乳糖醛酸酶。由成熟番茄果实中分离而得的一种果胶酶,在植物中广泛存在。它催化1,4-D-半乳糖醛酸苷键的水解。按作用于底物糖苷键的所在位置,可分为内切半乳糖醛酸聚糖酶和外切半乳糖醛酸聚糖酶。内切酶只水解果胶多糖末端的糖苷键。
