豆腐箱是博山传统名吃。相传清乾隆帝南巡时,曾到博山品尝过豆腐箱这道菜,食后赞不绝口,称为天下第一菜。
制作豆腐箱的方法是,先将豆腐切成六分方丁,寸二长方块,用花生油炸至金黄色捞出,再在豆腐块的一面切开一块皮(一侧不切断,起箱盖作用),挖出内里豆腐,再填上调好的馅料,盖好“箱盖”。馅料有多种多样,有三鲜馅(海米、虾仁、猪肉)、蟹黄馅、鸡肉馅等。一般多用猪肉馅、什锦馅或素馅。猪肉馅的制作方法是把海米、木耳用温水泡好,把猪肉、海米、木耳、葱、姜、肉分别切成末,勺内放香油,烧开后投葱、姜、肉煸炒至八成熟,加酱油、海米、木耳、盐炒匀入盘内,加胡椒面拌匀,填入豆腐箱内,盖好盖放入盘内,成塔形,上笼蒸约5分钟取出。另勺放香油,开后加葱、姜、蒜末一煸,烹醋,投木耳、青菜、水笋和酱油、汁汤,汤开后调出粉,汤浓后浇在豆腐箱上即成。
豆腐箱将素荤巧妙搭配,口感细腻,浓香满口,皮韧馅嫩,回味无穷。其香其美,是语言和文字表达不出来的,只有亲口品尝才能感受到这道美食的无比妙趣,它给人的是色香味意形全方位的享受与快感。
