补充资料:清补凉乳鸽汤
广州人煲汤时所用的称之为“清补凉”的药材,是指淮山、杞子、沙参、玉竹、芡实等,有时亦把党参、红枣等也入列。这些均为性味平和而滋补清润的药材,十分适合广东气候饮用。
材料:淮山、芡实各20克,杞子、沙参、玉竹各15克、红枣4个,乳鸽2只、猪瘦肉150克,生姜3片。
烹制:各药材洗净,稍浸泡,且红枣去核,乳鸽宰洗净,与猪瘦肉洗净同置沸水中稍滚2分钟(即“飞水”)。然后一起与生姜放进瓦煲内,加入清水2500毫升(约10碗水量),武火煲沸改文火煲约2小时,调入适量食盐和少许生油便可。此量可供3~4人用
