两吃活虾
原 料：
活虾500克，油、料酒、盐、鸡精、葱姜汁、辣椒粉、胡椒粉各适量。
做 法：
1.活虾先用盐水泡一会，捞出后泡一下料酒；辣椒粉、胡椒粉、盐一起混合做成蘸料。
2.锅中倒水烧滚，将虾放入开水中烫至变色，立即捞出，剥去虾头，与虾肉分别放入两个盘中，分别加入盐、鸡精淹至入味。
3.锅内倒油烧至七成热，先将虾头炸酥后捞出摆在盘子的一角。
4.锅内留底油烧热，放入虾肉煸一下，然后烹入料酒、葱姜汁、烧至汁收干后撒上盐即可盛出与虾头同盘。
特 点：
虾用料酒泡一下能除去腥味。小虾中富含叶酸（维生素b9），叶酸能生成正常运行的红细胞，如果叶酸不足有可能引起贫血。怀孕的女性应该注意叶酸的摄取。
