本课题以不同工艺制得的醇法大豆浓缩蛋白(SPC),功能性大豆浓缩蛋白(FSPC),大豆分离蛋白(SPI),商业大豆分离蛋白(CSPI)为主要原料,并以乳化性能优良的酪蛋白钠(sodium casein )作为对照,在低速搅拌的条件下,制备不同比例的高浓度大豆蛋白乳化体系,主要以流变和显微观察的方法来表征不同乳化体系的性状,并通过不同溶剂条件下的溶解性能、表面疏水性指数、分子量分布、特性粘度、紫外差示和DSC等手段,从分子间作用力,分子量分布及形态和构象稳定性三个方面研究各大豆蛋白样品间的差异及其和高浓度乳化体系间的联系,并进行机理方面的探讨。

高剪切分散乳化是将一个相或多个相分布到另一个连续相中，而在通常情况下，这两个相是互不相溶的。
由于转定子相对的高速旋转和转定子高频机械效应带来的强劲动能使不同性质的物料在转定子狭窄的间隙中瞬时承受几十万次的液力剪切、液层摩擦、撕裂碰撞和喘流离心挤压等综合作用，使物料确保充分分散乳化、均质、溶液，从而使不相溶的固相、液相、气相瞬间高度分散和细化。
与此同时，相边界与表面张力呈指数关系，所以使终端分散相长期地保持稳定
