在多种成分五方杂处的环境中，最为人所能接受和信奉的处世哲学就是“中庸”。中庸的极致是“和”，它是调节矛盾的法宝。表现在潮汕饮食上，就是调节阴与阳、外与内、凉与热、补与消等矛盾关系。潮人深知食物就是药物的道理，深知食物之间配伍的忌讳。虽不见得人人都背过汤头歌诀，而他们的实践经验却有过之而无不及。因此，潮菜的每种食品搭配，都力求最佳营养效果。
潮菜的汤多是出了名的。这有两个原因。一是天气炎热，需要补充的水分多。汤讲究淡而不腻就是为此目的。二是用汤来调和各种食物的药性，以达到进补的目的。如潮菜中的“冬虫草鸡汤”“枸杞水鸭汤”之类，一般在宴会上就只喝其汤而弃其渣，因为经过长时间熬，营养已经渗在汤中了。阴阳合的思想，有时甚至要用形式表现出来。如“太极芋泥”“阴阳蛋羹”，都用食品在羹面上做出一个阴阳太极图来。
