The tenderness of goose leg was measured by four common methods for measuring meat of poultries: near infrared scanning,shear force measurement,muscle fiber diameter measurement and sensory evaluation.
结果表明:剪切力测定法、肌纤维测定法所测定的鹅肉嫩度一致性较高,结果最可靠;近红外扫描法在实际测量中存在一定误差,可靠性一般;感官评价法易受外界环境干扰,评价效果最差。
