The results shaw that the activities of debranching enzyme and α-amylase decrease greatly;water uptake ratio of rice, pH value of washing rice water, iodine blue value,β-amylase activity and insoluble-amylose concent decrease slightly; gelatinization temperature, peak viscosity, ultimate viscosity, breakdown value, gel value and soluble amylose content increase s.
结果表明稻米经微波处理后脱支酶及α-淀粉酶活力明显下降;米饭吸水率、米汤pH值及碘蓝值、β-淀粉酶活力和不溶性直链淀粉含量略有下降;糊化温度、最高粘度、最终粘度、破损值、胶凝值及可溶性直链淀粉含量略有升高;而总淀粉及全部直链淀粉含量则变化很小。
