[原料]刀鱼骨10条。
[调料] 黄酒、盐、味精各5克，糖10克，胡椒粉0.3克，热水500克，精油500克(实耗30克)
[操作程序]
1．把清蒸刀鱼在上席时剔出的骨头，放水中清洗干净。
2．盛器中放黄酒、盐、味精、胡椒粉、糖和刀鱼骨，加热水浸泡10分钟取出。
3．油锅烧热，放入鱼骨用小火慢慢炸酥后取出装盆。
[特色点评] 骨形完整，入口酥香松脆。刀鱼是长江四大名鱼之一，谷雨前肥嫩骨软。清蒸刀鱼上席时无骨不失其形，借骨做菜，堪称一奇。
