原料:熟火腿、熟牛舌各75克,苹果、老鸡蛋各50克,熟土豆250克,新鲜葱头、新鲜豌豆、新鲜胡萝卜、白芸豆各50克,生菜叶150克,玉米粉50克,酸黄瓜50克。

调料:牛奶150克,蛋黄30克,砂糖15克。芥末酱15克,柠檬汁50克,精盐、胡椒粉适量

烹饪方法:将熟火腿、牛舌、老鸡蛋、土豆各切丁、苹果(去皮除核),酸黄瓜切丁;葱头、胡萝卜洗净再用冷开水漂洗后切丁;白芸豆、豌豆煮熟,备用。将蛋黄、牛奶、玉米粉放入锅内拌匀,放在温炉板上加温、并不断搅拌匀,待蛋黄熟无腥味时,冷却后成蛋黄牛奶汁;备用。将火腿、牛舌、鸡蛋、土豆、苹果、酸黄瓜、葱头、胡萝卜丁放入盘内,加盐、糖、
