做 法: 取每只约150克的南澳港角螺10只,用刷子清洗干净,放进炊笼炊10分钟,取出用竹签挑出螺肉,螺肉同样用刷子刷洗干净待用,螺壳放入开水锅中,加白醋慢火煮约5分钟,再捞出用刷子刷洗表面至螺壳洁白漂亮为准;炒鼎洗净放入优质浓翅汤350克,芫荽头5克,拍裂的姜一块,红辣椒一粒,味精5克,麻油0.5克,老抽5克,精盐少许,放入角螺肉用慢火焗35分钟至螺肉软烂,然后把螺肉放在螺壳内,用原汁勾薄糊淋上即成。
