主料: 银芽6两(约240克),烧鸭1/4只,韭黄1两(约40克),青椒1只,姜1片,蒜蓉1/2茶匙,酒1茶匙,油2汤匙。

配料: 芡汁料:盐、糖各1/2茶匙,生粉1/2茶匙,水2汤匙。

做法: 1、烧鸭(又称“火鸭”)去骨,连皮切丝。

2、韭黄洗净,切段;青椒去籽,切丝;银芽洗净,沥去水分。

3、烧热油1汤匙,放下银芽,洒水少许,迅速炒拌取出。

4、烧热油1汤匙,爆香蒜蓉,放入青椒、火鸭丝、银芽,洒入酒,拌匀芡汁料埋芡,放入韭黄,兜匀上碟。

备注: 炒银芽要迅速,洒少许水,可去除银芽的豆青味。
