原 料:

日本豆腐2条,胡萝卜、莴笋、花生米15克,生姜10克,花生油500克(实耗油100克),盐5克,味精5克,鸡精粉5克、湿生粉适量。

做 法:

1.日本豆腐切成段,胡萝卜去皮切丁,莴笋去皮切丁,花生米炸好去皮,生姜去皮切片。

2.烧锅下油,待油温110℃时放入日本豆腐炸至金黄,倒出沥净油,加少许盐、味精炒匀,摆入碟四周。

3.另烧锅下少许油,放入姜片、胡萝卜丁、莴笋丁炒至快断生时,调入盐、味精、鸡精粉炒透入味,下花生米,用湿生粉勾芡,盛入日本豆腐中间即成。

特 点:

此菜含维生素c、b2、e以及多种矿物质。有利水美颜、护肝益气之功效。

操作技巧:

炸日本豆腐时油温要先高后中,炸出的颜色才能呈金黄。
