补充资料:蒜香烟肉蒸扇贝
扇贝是一种极为鲜味的贝壳,它的种类有很多,常见的有北方的栉孔扇贝和南方的华贵栉孔扇贝,广东沿海一带所产的叫“日月贝”,因它长期生活在海底,贝壳受到日照的那面呈粉红色,另一面则呈白色,两面壳的颜色好像“日月”。
扇贝跟其他海产一样,都含有丰富的营养,有些地方的渔民用小扇贝和北芪煮汤,是一种保健的汤品。干贝也是扇贝干制而成的,它是海味中的“八珍”之一。
笔者认为,扇贝以蒸、煮为佳,食肆里常有“粉丝蒜茸蒸扇贝”和“金银蒜蒸扇贝”等菜肴,也有以酱汁烧焗的做法。其实,烹制扇贝着重火候,过火则会失真,当然鲜活更重要。
“蒜茸烟肉蒸扇贝”一菜讲究香口,这里选用西餐的烟肉,其烟味并非太浓,与蒜头相配可达和味。
原料:扇贝、烟肉、蒜茸、红椒(切粒)、葱花、花生油、盐、味精、绍酒、麻油、胡椒粉。
做法:将烟肉切碎,开镬炒香,沥去油分备用。用刀起出扇贝的一边贝壳,去掉脏物,洗净备用。将炒香的烟肉、蒜茸、红椒、盐、味精、绍酒、麻油、胡椒粉均匀撒在扇贝上,淋上花生油,下镬蒸熟,撒上葱花便成。
提示:烟肉与胡椒味极配,选用原粒磨制的胡椒粉,可达更佳的效果
