菜 名: 海王汁鱼翅
主 料:
做 法: 取鲜活桂花鱼、金龙鱼或沙尖鱼,放入汤锅中,加水,烧开后慢火熬汤,1000克鲜鱼约熬出1000克鱼汤,时间约一小时,然后调味,用密勺过滤待用。
取各位小沙煲,放几叶嫩白菜心叶垫底,水发鱼翅每位75克盛放小盘中,在客人面前将水发鱼翅放在白菜叶上,倒入鱼汁汤,放在各位的小固体酒精炉上煮滚。上桌时跟酱碟胡椒粉、芹菜末、浙醋。
特 点: 传统潮州菜炖鱼翅,都是使用老鸡、排骨、猪脚、火腿骨等肉类,但“海王汁鱼翅”这一新派潮菜却一改传统做法,不用肉类而采用潮汕盛产的海鲜熬汤来炖鱼翅。这样鱼翅本为海味,利用海味鲜汤来炖,自然是非常合适,且别有风味。
