原料/调料]
鲔鱼肉 2片
鲷鱼肉 1片
花枝肉 1片
鲑鱼卵 1/2大匙
寿司饭 1杯
小黄瓜 1片(圆形)
海苔 2片
小鱼卵 1/2大匙
生菜 2叶
绿花椰菜 2朵
紫生菜 1/3杯
山葵酱 1大匙
酱油 1大匙
盐 1/2小匙
醋 1大匙
冷白开水 3大匙
[制作流程]
(1)手洗净擦干,双手沾醋及白开水,一手取寿司饭约20公克,握紧成长方形(依序做6个)。
(2)将山葵酱一一涂在鱼片及花枝片中央各少许,再将寿司饭放置其上,轻轻压紧,翻转过来,将鱼片向上摆,大拇指与食指轻压两侧,整理出长方形状,依序做完鱼片及花枝片共四片。
(3)再取一个寿司饭,外围围上海苔,上面放上鲑鱼卵及装饰一片小黄瓜即可。依序做另一个鱼卵寿司。
(4)先将生菜、紫生菜排入经由冷冻结冻过的保鲜盒中,再将做好的生鱼片寿司3个放入;取另一冷冻保鲜盒,亦先将生菜排入,再放入剩下的3个生鱼片寿司及绿花椰菜,酱油可用经济小铝包或小盒装,便当就大功告成了。
将生鱼片寿司用筷子夹取沾酱油食用亦十分可口,另外,一定要在新鲜时间内食用完毕。
