[原料] 净仔母鸡1只(约重1500克),姜片10克,葱250克,花椒20粒,茶叶25克,米饭150克,精盐10克,绍酒10克,白糖25克,饴糖5克,辣酱油50克,芝麻油15克。

[制法] 先将仔鸡从翅下开一小口,掏出内脏和鸡嗉,用洁布拭干鸡腹内血污,用盐、姜、葱10克、花椒10粒撒放在鸡腹内,揉擦腌渍片刻。再用沸水将腌渍过的鸡洗烫一遍,使鸡皮收缩,擦干水份,抹上一层稀饴糖,再抹上一层黄酒,放风口处吹干表面;取铁锅1只,锅中先撒匀米饭,再撒花椒10粒、茶叶(浸湿)和白糖,上放铁丝箅子,箅上铺一层葱,将鸡脯朝上放葱上,盖严锅盖,先以大火烧至锅中冒黄烟时,沿锅边淋入清水(约200克),以产生水汽,然后压火焖约30分钟取出熏鸡,在鸡表皮上涂抹一层麻油,斩成鸡条块,放在盘内码成原鸡形,配辣酱油上桌。
