安徽奶汁肥王鱼
原料：肥王鱼1尾、瘦猪肉、葱白段、姜片、白胡椒粉、鸡汤、香菜、干淀粉、熟猪油。
制作：
１．将鱼去鳃，剖腹去内脏，洗净后，用刀在鱼身上两边划小柳叶刀花。
２．猪瘦肉切成3厘米长、1．5厘米宽的鸡冠形薄片。
３．锅放在大火上烧热，下熟猪油，烧至七成熟时，放入鸡汤，再放入鱼、猪肉和葱、姜，盖上锅盖，将汤煮成奶汁，加盐，洒上白胡椒粉，出锅倒入汤碗内即成。
特点：汤浓似奶，鱼肉肥嫩细腻，味道极鲜。
