主料：老麻鸭1只
配料：油、老姜、辣椒、大蒜、生抽王.
做法：
1.活鸭宰杀后去内脏，剁成大块洗净，老姜、辣椒切片，大葱扎成麻花状备用。
2.炒锅放油，大火烧热后加入生抽王，先将鸭头和鸭腿放入，加老姜和辣椒片稍炒一下，再加入鸭肉块，大火爆炒，直到鸭子外皮成金黄色。
3.锅内加水，用小火慢慢炖两个小时即可，起锅前十分钟加入大葱。
菜品特点：鸭肉酥软，色泽黄亮，吃起来肉汁酥香，油而不腻，味道爽口。
菜品制作：红辣子餐馆鸭血
鸭血有补血和清热解毒的作用，还有预防和治疗缺铁性贫血的功效。
